Tabbouleh

 
A delicious lunch full of fiber
 

Ingredients

 
  • Bulgur wheat 1 cup
  • Boiling water 1 ½ cups
  • Fresh lemon juice ¼ cup
  • Olive oil ¼ cup
  • Kosher salt 3 ½ teaspoons
  • Scallions, chopped (one bunch) 1 cup
  • Fresh mint leaves, chopped (one bunch) 1 cup
  • Flat leaf parsley, chopped 1 cup
  • 1 cucumber, chopped
  • Cherry tomatoes cut in half 2 cups
  • Pepper 1 teaspoon
 

Directions

 
Kids: Place bulgur in bowl
Adults: Pour in boiling water
Kids: Add lemon juice, olive oil and 1 ½ teaspoons salt. Stir and let sit at room temperature for one hour.
Adults: Chop scallions, mint leaves, parsley cucumber, and tomatoes.
Kids: Add scallions, mint, parsley, cucumber, tomatoes, 2 teaspoons salt and 1 teaspoon pepper.
Kids: Let sit in refrigerator for a couple hours and serve.
Adults: *This dish is an excellent source of fiber. It has almost 7 grams of fiber per serving!
