Kick of Grilling Season With Food Safety

Are you getting ready for the start of grilling season! The weather is warm and the kids are just about out of school.  With a three day weekend ahead, who doesn't have plans for at least one outdoor barbecue!

With the weather getting hotter, that means we need to be even more vigilant with food safety practices.  

Let's just review some key basics*:

1.  Clean:  start your cookout with all chopping and eating surfaces clean.  Use hot soapy water to wash prep areas.  Remind kids to wash their hands for 20 seconds (sing the alphabet song) before and after touching foods (that includes adults!)

2.  Separate:  Keep raw meat away from other foods because of the juice.  Keep raw away from cooked foods.  Keep fruits and vegetables away from raw meats.

3.  Cook:  Use a thermometer to make sure foods are cooked to the proper temperature.  Proper temperatures ensure that any bacteria is killed!  

Safe Minimum Internal Temperatures include:

  • Hot dogs—165 °F or until steaming hot,
  • Poultry—165 °F,
  • Ground beef and other ground meat—160 °F,
  • Whole cuts of pork, lamb, veal and beef—145 °F (followed by a three-minute rest time), and
  • Fish—145 °F

 

4.  Chill:  Too often, things are prepared in stages and then left out until everyone is ready to eat which can mean that foods are being left out too long,  Bacteria begins to grow after 2 hours so you want to store foods away before then.  If food is ready by your guests are not:  Keep hot foods hot by placing them on the grill until it is time to eat.  Keep cold foods cold by using a cooler.
